If you grew up in the '70s and '80s, you would have remembered Steak-Umm, the super-thin steaks that reigned supreme during the golden age of processed food.
Contrary to the fake meat reputation it earned at the time, Steak-Umm has always been made from the processed, trimmed parts left after removing the major cuts of a cow.
Steak-Umm was invented by Gene Gagliardi, who had the idea to create a "homogenized" beef product that could be thinly sliced and easy to chew in a steak and cheese sandwich.
Gagliardi gathered beef scraps and ran them through a meat grinder several times until the meat was smooth, pressed it into a loaf, and then froze it so that it was sliceable.
