What Are Crash Hot Potatoes And How Do You Cook Them?
By Elaina Friedman
Crash potatoes are small potatoes that are crushed with the back of a frying pan or another blunt object and roasted in an oven at high heat for a crispy texture.
Crash potatoes are similar to American smashed potatoes, but instead of parboiling the potatoes, the Australian version calls for boiling the potatoes until soft and tender.
Australian food writer Jill Dupleix created a recipe in the 1990s, and it has since become a classic in Australia and beyond.
Start by boiling small potatoes in salted water for 15 to 20 minutes. Once they've cooled off, place them on a parchment-lined baking sheet to start the smashing.
Use a potato masher, the heel of your palm, or a water glass to smash them (or, in this case, crash them) into flattened, irregular discs.
Finally, season them with olive oil, melted butter, sea salt, pepper, and sprigs of oregano and thyme, and bake them in a 410 degrees Fahrenheit oven for about 15 minutes.
