Tofu is a vegetarian protein that takes on the flavor of whatever seasoning is used. There are many effective ways to cook it, but you'll want to avoid grilling it.
Tofu is delicate, and its high water content makes it break down easily and melt when it comes into contact with the high heat of a grill.
It completely falls apart, crumbles, and disintegrates into the lower reaches of your grill. However, you can buy specially formulated firm tofu that should hold up to grilling.
Peppers are a better grilling option since they're firm and more flavorful when charred. Onions also work well as long as they're cut properly to keep the slices intact.
Zucchini and squash will also grill better than tofu. Portobello mushrooms are the king of grilled vegetarian options and can arguably grill better than steak.
