Whether you make your own thin patties or buy them pre-made, this technique ensures an even burger casing around the stuffing so you get a bit of both in every bite.
You want to use a thin patty because a 4-inch patty runs the risk of having a dry, charred, overdone outside and a raw inside with unmelted stuffing.
