The Versatile Pan Restaurant Chefs Use Instead Of Sheet Pans
By Betsy Parks
You don't need a lot of gadgets to be a great cook, despite what Instagram or TikTok might say, and when outfitting your kitchen, think more like a professional chef than a home cook. There are a couple of products you don't normally see marketed to home cooks, and one staple in commercial kitchens you want to pick up is the versatile sizzle platter.
Sizzle platters are small, shallow aluminum or cast-iron baking dishes that can go in and out of an oven or broiler with ease, and it's nice to have a couple of them around so that you can take things in and out at different times rather than all together on one sheet pan. The possibilities for this dish are endless, as you can use them for toasting nuts and seeds or broiling vegetables.
They're also very light and stackable with a lip around the edge that will keep the liquid from spilling over, and you can use them to corral ingredients that have been prepped. Priced at around $10 each, they're usually between 10-12 inches, which is the perfect size for roasting meat or baking.
