The Unexpected Mayo Alternative For Creamy And Delicious Egg Salad
By Megan Anderson
To change up the flavor and nutrition of your favorite egg salad recipe, consider swapping the mayonnaise for white beans, which have a similar smooth texture without all the fat.
Substituting mayo with white beans can help add extra fiber and protein to your basic egg salad, making your meal healthier and all the more satiating.
Swapping white beans into egg salad only involves a few extra steps. Start by picking any variety of white beans, like navy, great northern, or any others you may have on hand.
Drain and rinse your can of beans. After allowing the water to drain off, pour the beans into a bowl and mash them with a fork or potato masher until they are smooth.
The whole can of beans might be too much, especially if you're cooking for one or two. If this is the case, you can save the extra beans in the fridge for another recipe.
You can also use dried beans. Simply soak and cook the beans until they are very soft and allow them plenty of time to sit in the fridge to cool before you mash them.
