The Traditional Way Cracker Barrel Makes Turnip Greens
By Camryn Teder
Although Cracker Barrel's turnip greens are "all-natural" and "domestically grown," that's not why this dish stands out from other restaurant chains.
The restaurant's turnip greens are especially good because they are cooked the traditional way — with ham. Cooking turnip greens with ham ensures that they're packed with flavor.
The ham's peppery flavor and salt content balance out the inherent bitterness found in turnip greens. It also makes the meal a whole lot more filling.
To cook your Southern stewed turnip greens like Cracker Barrel, cut up the ham of your choice. Ham bone or ham hocks are traditional, but any form of the meat will do.
Cook the meat in a saucepan over medium heat until crispy. While the ham is cooking, wash and dry your greens.
Once the ham is crispy, throw the greens into the saucepan and add water and the seasonings of your choice to the mixture.
Throw a lid over the combination, and let it simmer for about 40 minutes. When the greens become tender, remove from heat and season to taste with salt and pepper.
