A Sweet Pantry Item Will Take Your Lemon Bars Up A Notch
By Crystal Antonace
If you love homemade lemon bars but don’t want to go through the trouble of making your own custard, using lemon curd is a quick way to still deliver on flavor and texture.
Classic lemon curd is a product similar to jam, but instead of being made with a steady ratio of sugar and mashed fruit, curd is made of egg yolks, sugar, citrus juice, and zest.
Once the mixture cooks down, the curd becomes lusciously creamy, similar to the homemade custard you have to make for homemade lemon bars.
Add two jars of store-bought lemon curd to par-baked homemade shortbread crust and bake the assembled mixture in the same way you would a homemade custard.
After 25 minutes in the oven and a few hours in the refrigerator, the bars will be perfectly sliceable and taste just as delicious as homemade lemon bars.
