The Story Behind New Hampshire's Fittingly Named Maple Hurricane Sauce

New Hampshire's maple hurricane sauce combines pure maple syrup, butter, and apples. While primarily popular in the New England states, the syrup is making inroads nationwide.
In the early 20th century, Wilfred and Polly Dexter owned and operated Polly's Pancake Parlor in Sugar Hill, New Hampshire, using ingredients they grew on their farm.
In 1938, a nor'easter cyclone swept through their land, knocking apples off trees — meaning they were likely to go bad unless used immediately.
The couple decided to cook the apples with maple syrup and butter to see if customers would like it. Today, maple hurricane sauce is a signature food of the state.
