The Simple Way To Upgrade Basic Tomato Sauce

Many chefs choose to use canned tomatoes in their sauce, and San Marzano canned tomatoes stand above the rest. San Marzano tomatoes are grown exclusively in Italy and have fewer seeds, more pulp, and more sweetness than most other tomatoes, so using them will result in a thicker, sweeter, and richer sauce.

Adding herbs to your tomato sauce can greatly increase the flavor — especially fresh herbs like basil, oregano, and thyme, though dried herbs will work as well. Other secret ingredients include fish sauce, which can add an umami flavor to the sauce, and red wine, which adds acidity and depth of flavor.

Adding a pat of butter or a splash of extra virgin olive oil will make your tomato sauce richer and silkier while also balancing out the acidity present in the dish. You can also add in a little pasta water to emulsify the fat, and top it with freshly grated cheese as a garnish to thicken your sauce and add extra flavor.
