The Reason Your Burger Meat Needs Needs Baking Soda

To ensure that your homemade burger patties turn out juicy and tender, head to your pantry and grab your stash of baking powder.
Baking soda is a quick and effective meat tenderizer that can preserve the juiciness of your ground beef, chicken, steak, and other meats.
Because baking soda raises the pH of the beef, preventing the proteins from releasing liquid, your hamburger meat will retain its moisture while it cooks.
You’ll want to stir in a mixture of ½ teaspoon of baking soda and 1 tablespoon of water for each pound of ground beef, then let it rest for five to 15 minutes.
