The Mayo Trick For Chicken Burgers That Are Actually Juicy

A juicy patty means a tasty burger, and since chicken is a lean meat, it has less fat which means less moisture. You can avoid a tough and dry chicken burger by adding an extra ingredient, such as mayonnaise.
Mayo is a rich source of fat and moisture which works perfectly for creating juicy chicken burgers, and it won’t render down into a puddle of liquid, like bacon or butter. The flavor won’t overpower your burger, but if you just dislike mayo, you can use full-fat Greek yogurt instead.
Use two tablespoons of mayo for every pound of ground chicken, and choose a brand with a high-fat content such as Duke's or Whole Foods. Mix the mayo with the ground chicken, and let it sit in the fridge for an hour for the juiciest burgers.
