For banana bread to be delicious, it must be moist, and the secret lies in your freezer. Simply freeze and then thaw the bananas you're going to use for the best results.
When freezing a banana, you're freezing the water content into crystals, and thawing them will release their natural moisture as the crystals turn back into water.
Freeze the bananas, and once they're fully frozen, thaw them quickly in the microwave. Use ripe or overripe bananas since they have less starch and more sugar than green bananas.
The bananas will be juicy and ready to be mashed right away. Mashing at this point helps release more banana flavor and moisture than you'd get normally.
You may realize the batter is wetter than normal, but resist the temptation to add more flour. Keep in mind that a wetter batter may take a bit longer to bake.
