The Ice Water Tip For Ultra-Crispy Roasted Potatoes

If you like extra crispy roasted potatoes, start soaking them in ice water once they're sliced to draw out excess starch, making them more crunchy when cooked.
When starch is cooked, it can make potatoes sticky and gummy. Ice water's cold temperature closes up the potatoes' starch cells, creating an extra crunchy result.
Simply toss your bite-sized sliced potatoes into a cold bowl of iced water and let them soak for a few hours to draw out the starch.
Then, you can either mix the potatoes and water around to loosen the starch or rinse them in fresh, cold water once they've finished soaking.
Once the bowl has been drained, the potatoes can be dried and prepped for roasting. This hack is often used for making French fries, but any type of cooked potatoes also works.
