The Foil Mistake You Should Avoid To Keep Fried Chicken Crispy
By Molly Wilson
While many people wrap their foods in foil to keep them warm until they are ready to be served, doing this trick with crispy fried chicken can ruin the dish.
Wrapping foil tightly around fried chicken may keep the poultry warm, but the crispy skin will get soggy if there's no way for the water vapor from the steam to escape.
Rather than wrapping the dish, place it back in the oven at around 200 to 250 degrees Fahrenheit and lightly cover it in a foil tent, leaving enough space for the steam to escape.
If you have one handy, placing the chicken on a wire rack in a sheet pan during the oven-warming process is best, as it allows for air circulation all around the food.
