If you're storing some chocolate for your next baking project, there are a few things you should know about how to keep it fresh.
Chocolate has thousands of different molecules that contribute to its unique smell. You can trace the majority of its scent and taste to roughly 25 essential molecules.
These compound concentrations have to be exact in order — otherwise, the chocolate can end up tasting very different. Strong nearby odors can throw off this delicate balance.
It's important to store your baking chocolate far away from foods with strong smells, so you should not let foods like onions or garlic sit near your chocolate.
To help safeguard against other smells binding with the bar, you can wrap it with plastic or keep it in another barrier, such as an airtight container.
It's best to leave your chocolate in a cool, dry place like a pantry. Temperatures that are too hot melt chocolate, while cold temperatures can make it brittle and cracked.
