The Dollop Technique For Beautifully Frosted Cakes Every Time

While a crumb coat can ensure that your cake has a sleek finish, it can be time-consuming. If you want to save time, the dollop method can help create a perfectly decorated cake.
Plop half your frosting onto the top of the cake, in the center. Using a large offset spatula, carefully spread out the frosting without letting it fall over the sides.
Work slowly and carefully, leveling the frosting out as you go so that you don't wind up with an uneven layer of frosting on top. Turn your cake as you go to ensure an even spread.
Your frosting spreads out from that central dollop point, so avoid thinning it out too much, as overdoing it could cause the cake's crumbs to dislodge and get caught in the icing.
If your frosting is too cold, you risk pulling apart the top layer of the cake. If it's too warm, on the other hand, your frosting may not hold its shape well.
