If you've put in some quality time baking the perfect cake or spent your hard-earned money on something special from the bakery, be sure to clean off the knife between cuts.
Most people cut a cake like one solid object, but its components have different densities. The cake itself is usually light and spongy, while the frosting is thick and sticky.
If you don't clean your knife between cuts, you'll crush the cake's crumb and mess up the frosting by dragging the debris through the cake with each slice.
Keep a clean towel nearby to cut perfect slices every time. Wipe the blade off with a clean, slightly damp paper towel, or run the knife under hot water and dry it each time.
A wide-bladed knife picks up the frosting and any sticky fillings as it drags through the cake. Instead, use a thin, serrated tomato knife to save your crumb from getting squished.
