While you should normally leave your roast beef uncovered in the oven as it roasts, the only exception to this rule is if your cut of beef weighs over 8 pounds.
In this case, you should partially cover the meat in the oven at the midpoint of roasting to ensure it will be as soft and moist as possible to deliver flavorful, juicy bites.
Building an aluminum foil tent for your plus-sized roast is the best method to cover the meat, preventing it from drying out and becoming chewy.
The foil tent will ensure that the heat from the oven reaches every part of the meat and will protect the top outer layer from charring so it browns evenly.
Don't wrap the foil too tightly to avoid steaming your joint. Loosely covering a hefty cut of beef halfway through as it roasts in the oven will keep it succulent.
