The sesame oil used for Chinese cooking, Japanese dipping sauces, or Korean marinades is toasted, unrefined, and composed of unsaturated fat, making it susceptible to going rancid.
It spoils faster when exposed to heat, light, and humidity, so instead of keeping it on the counter, store your opened bottle of sesame oil in your fridge's cold and dark space.
