The Cooling Rack Trick That Saves Gluten-Free Bakes From Going Gummy

Gluten-free baking can be very finicky and dependent on small changes in moisture ratios. Often just a little extra moisture can throw things off, resulting in dense, gummy bakes.
After you take baked goods out of the oven, they will continue to bake if you leave them in the pan, leading to a gummy texture. Thankfully author Elizabeth Barbone has a solution.
Instead of letting them cool in the pan or on a plate, she transfers her baked goods to a wire rack once they’re safe to touch — about 5 to 10 minutes after removal from the oven.
