This tip allows the white meat — which is notorious for drying out the fastest — to cook in its juices, ensuring that the most sought-after part of the chicken remains moist.
When cooking a whole chicken breast side-down, you can leave it like that during the entire roasting process or flip it over after roughly thirty minutes to brown the breast skin.
However, if you choose to leave it as is, the oven will stay at a consistent temperature, and the white meat will be a little juicer than if you turn it over partway through.
In addition to roasting the chicken upside down, you can achieve moist, tender meat by brining the bird with salt ahead of time and rubbing the outside with olive oil or butter.
