The Cheese You Should Certainly Be Adding To Homemade Ice Cream
By Alexander Billet
Unlike store-bought ice cream, homemade ice cream can be flavored any way you want. If you want to make your ice cream extra creamy, add some cream cheese.
Cream is already a key part of making ice cream, and cream cheese is just a thicker version. Sufficiently softened, cream cheese adds a richness you may not get in ice cream.
Immediately after you remove it from the heat, mix the cream cheese into the mixture of eggs, milk, and cream when it is still hot. This will quickly soften the cream cheese.
Many recipes suggest quickly cooling the mixture in a bowl of ice water. Other methods recommend covering it with foil or wax paper, refrigerating it overnight, then freezing it.
