The Chanterelle Mushrooms Substitution That's Sweetly Affordable

Chanterelles are some of the most coveted mushrooms and can cost upwards of $25 per pound or $200 if dried. Fortunately, hedgehog mushrooms are an affordable alternative.
These chef-approved substitutes aren't the same as chanterelles, but they have a similar shape, take on a comparable color when cooked, and cost less. They can be tricky to find.
Chef Devan of Braised and Deglazed likens the flavor of hedgehogs to watercress and oysters. "For me, these mushrooms taste mild, nutty, and have a beautiful sweetness," he writes.
While mushrooms vary in taste, most benefit from being sauteed with garlic and butter — including hedgehogs. Let them brown, then hit them with salt, pepper, lemon, and parsley.
