The Best Kind Of Chocolate For Dipping Strawberries

When making handmade chocolate-covered strawberries, it's key to choose a chocolate that's not overly sweet. Semi-sweet or bittersweet baking chocolate is best for the task.
The higher cacao content of baking chocolate balances the floral sweetness of the strawberries with rich flavor notes to complement the fruit.
However, unsweetened varieties that are 100% cacao are extremely bitter and astringent, so semi-sweet or bittersweet chocolate offer a pronounced flavor with less sweetness.
Although these baking chocolates vary in their level of cacao, they contain at least 35% and will typically have a more prominent chocolate flavor.
If you like very dark chocolate with no added sugar or milk solids, use dark baking chocolate with 60% cacao or above. For higher creamy notes, use chocolate with some milk solids.
Baking chocolate chunks and chips contain fewer emulsifiers and are small and melt quickly, whereas bars or squares need to be chopped or grated prior to melting.
