The Baking Test To Check If Your Pecan Pie Is Done
By Tom Maxwell
Pecan pies are tricky to bake because they can look done but actually be undercooked. Thankfully, there is an easy way to find whether or not the pie is done.
The recommended internal temperature for a fully baked pecan pie is 200 degrees Fahrenheit, but if you don't have a thermometer, you'll want to look for a jiggle.
When your pecan pie is out of the oven, you want the middle to be jiggly, which will indicate that the filling's sugars are still a little liquified and will set as they cool.
Lightly pressing on the center of the pie is a nearly foolproof way of testing if the filling is baked. The filling in a pie that's baked will spring back when pressed.
An underbaked pie will cave in under the pressure, and if there's no spring at all in the middle of your pecan pie, it's likely overbaked.
A pleasing caramel-brown color on top and a slight puffiness around the crust are also good indicators that your pecan pie is fully baked.
