While apple and pumpkin pies get the most attention in the fall, blueberry pie can become your new autumnal favorite with a small splash of almond extract.
The flavor analysts at Foodpairing highlight "the herbal notes of a blueberry's peel," including a certain maltiness that is an excellent match for almonds.
While natural almond extract is often made from cold-pressing real almonds, it doesn't have a very strong nut flavor. This could be because almonds are actually fruit.
Almond extract has a rather sweet flavor that's reminiscent of cherries. You'll want to be conservative when adding it to your blueberry pie filling since it doesn't need much.
Almond extract can substitute for vanilla extract in your recipe, or they can be used together in the same pie along with some citrus zest to boost the blueberries' brightness.
