Shredded Zucchini Is Your Answer For A Delicious Gluten-Free Grilled Cheese
By Riya Anne Polcastro
If you follow a gluten-free diet and crave a grilled cheese sandwich, you can recreate the delicious, toasty bread with shredded zucchini and a couple of staple ingredients.
This trick is a great, gluten-free way to consume more veggies, and the individual slices are fried in a pan, so you don't need your oven to bake a whole loaf of zucchini bread.
You need drained shredded zucchini, an egg, parmesan cheese, seasoning, oil, cornstarch, almond flour (or another gluten-free flour), and the cheese to melt and fill your sandwich.
Heat the oil in a pan and combine the ingredients in a mixing bowl (except for the melting cheese). Drop a dollop of the mixture onto the pan and form it into a bread-shaped patty.
Cook it on both sides for a few minutes, remove it, and repeat until all of the zucchini mixture has been used. Then, use the zucchini squares to make your typical grilled cheese.
If you prefer to use the oven, bake your zucchini patties at 450 F for 15 minutes. Flip and bake them for another five minutes, then melt the cheese with the broiler or stovetop.
