Roasted Tomatoes Are The Trick To Elevate Your Spaghetti Sauce

Depending on where you live, if you buy a supermarket clamshell of cherry tomatoes in the winter, they're likely to be too watery and mild to enjoy. However, you can bypass this lack of flavor by cooking the tomatoes to remove the moisture and concentrate their sweet, tangy flavors into a delicious sauce.
Roasting tomatoes in an air fryer can caramelize the sugars for an intense flavor in less than 15 minutes, or you can roast the small tomatoes on an olive oil-covered sheet pan with some salt in the oven for 20 minutes. When the tomatoes are finished roasting, leave them whole or put them in a blender and simmer them on the stove.
By adding garlic and seasonings, such as woody herbs like rosemary and thyme, these complex-in-flavor tomatoes will be the perfect upgrade to a basic tomato sauce you've been looking for. You can also add a touch of honey or balsamic vinegar to make up for an out-of-season lack of sugar.
