Ree Drummond's Crispy Breaded Chicken Uses An Unlikely Ingredient
By Juliet Kahn
When it comes to making her crispy "everything" chicken cutlets, Ree Drummond starts by dredging the cutlets in flour, salt, and pepper and then dips them in a mixture of beaten egg and milk. Anyone who knows the standard procedure of making breaded chicken cutlets can anticipate what comes next, but Drummond diverges from the expected path.
Much to our surprise, Drummond breads her cutlets in a mixture of crispy panko crumbs and everything bagel seasoning — the latter of which is what sets her recipe apart. She finishes the dish by frying the cutlets in a mixture of olive oil and butter and arranging them on a vivid bed of greens accented by halved cherry tomatoes and slices of lemon.
Though everything bagels have plenty of fans, the baked good's classic seasoning mixture isn't typically associated with any other dish. However, the ingredients in the seasoning (dried onion, dried garlic, sea salt, sesame seeds, and poppy seeds) give it a tangy, salty, savory, and a little sharp taste, making it an ideal topping for everything from silky cream cheese to fried chicken.
