Cheese sauce, although delicious, is quite heavy on the palate. Thankfully, all you need to lighten it up while still keeping its genuine flavor is a little bit of cauliflower.
Puréed cauliflower's mild taste doesn’t overpower the sauce, and its smooth, creamy texture blends beautifully with cheese for a delightfully light and equally versatile sauce.
All you need to do is boil the florets and purée them with a bit of the cooking liquid. If you'd rather go the microwave route, you can steam the cauliflower before puréeing.
Add your shredded cheese to the creamy purée and heat it on the stove to fully melt it. Stir it constantly to blend the ingredients; otherwise, it may turn out lumpy.
You can boil or steam your cauliflower in vegetable, chicken, or beef broth instead of water to improve its depth of flavor without adding extra heaviness or density.
Season your cauliflower cheese sauce with light and flavorful additions like mustard, onion powder, and paprika. You can also add red pepper flakes for a spicy kick.
You can alternatively use roasted cauliflower for a delicious queso — just blend it with a bit of broth or stock before melting the cheese in for a light, mouthwatering sauce.
