The key is to dust your onions with cornstarch before dipping them into the batter. This helps your batter adhere because it provides a gritty texture for the batter to grab onto.
To ensure the batter doesn't fall off, you'll also want to dry the onions if you pre-soak them and remove their protective membrane to expose a more textured layer.
For better adherence, ensure the batter isn't too thin and or cold. The oil should be around 360 to 375 degrees Fahrenheit before dropping in your battered ring.
