Pot Roast Meatloaf Is A Deliciously Budget Friendly Crossover

If you're craving a pot roast but have limited time or budget, all you need to do is substitute the chuck roast with ground beef to make a meatloaf pot roast.
The dish offers the same comforting flavors, but you won't have to do any searing, and a meatloaf will be done in less than half the time it would take for a chuck roast to cook.
Simply mix up the ground beef, assemble your meatloaf, and throw it in a roasting dish with vegetables for a flavorful, inexpensive dinner that can be ready in an hour or so.
You'll need sturdy vegetables for pot roasting, so grab your favorite root vegetables like potatoes, parsnips, turnips, or carrots.
You could also try something new like butternut squash, celeriac, or beets. Because your meatloaf cooks for less time, be sure to cut your vegetables a bit smaller than usual.
If you find that your meatloaf routinely comes out dry, try soaking some breadcrumbs in milk to make a panade, then seamlessly mix it into the meat to make your loaf juicier.
