Leftover mashed potatoes are boring when reheated, but you can transform them into a flatbread by combining them with wheat flour, salt, warm water, and activated bread yeast.
This flatbread is the latest take on potato bread, which is sometimes made with potato flour and wheat flour. Potato bread is soft and springy and appears in many cuisines.
Mashed potatoes already contain the additional ingredients you would need when making potato bread from scratch, so all that's missing is some added wheat flour.
The gluten in the wheat flour becomes stretchy during the proofing rise, while the leftover mashed potatoes create a uniquely moist, fluffy, and flavorful result.
