Marinate Your Meat After Grilling For The Best Flavor Boost

Marinating is often a great way to infuse food with flavor, but it can make searing much more difficult, as it creates moisture that prevents meat from browning.
However, thanks to the science of how meats absorb liquid relative to heat, all you have to do is marinate your meat after cooking it instead of before.
When you marinate a steak after it's cooked, it wants to take in the liquid you're exposing it to as the loosening fibers create, in essence, a suction effect within the meat itself.
Getting raw meat to fully absorb a marinade can be challenging, but it's much easier when the cooked meat is already trying to absorb liquid as its fibers expand.
It may seem like it's counter-productive, but it will actually save you time and effort. You'll also taste more of the marinade when you do it after grilling.
