Kopytka: The Polish Potato Dumplings You Should Try
By Cristine Struble
Translated to mean "little hooves," kopytka is a Polish dumpling made from potatoes, flour, egg, and seasonings. It's recommended to use fresh potatoes over leftover ones.
After the ingredients are combined, the dough is rolled, cut diagonally, boiled, and sometimes fried. Kopytka can be served plain or topped with bacon, chives, or even just butter.
Kopytka is similar to another popular Polish potato dumpling, pyzy. However, where pyzy uses raw grated and mashed potatoes, kopytka is made using cooked potatoes.
From the use of the humble potato to the simplicity of the recipe, this comfort food is meant to be a homemade bite that warms the heart and fills the belly.
