José Andrés' Game-Changing Grill Process For Rare Steak Lovers
By Kelly Douglas
José Andrés is practically the king of the grill, which means that he not only knows how to grill the perfect steak, but he also has plenty of expert advice. The chef's top piece of advice is for getting that coveted sear while still having the juiciest rare steak around.
Andrés says that the key to ensuring the juices don’t leak out of your steak is to put time and care into tempering the steak before you cook it. The best way to temper the steak is to put it on the grill's vegetable rack until it’s about 105 F, then get the grill as hot as possible to finish it, so that the inside and the outside of the steak will be hot and the steak's juice will stay inside.
If you don't want to temper steak on the grill, don't worry — this trick also works in the oven, though it takes a little longer. To do so, set your oven to a low temperature (about 250 F) and pop the steak in for about 45 minutes until it becomes rare, then throw it onto a hot grill to finish it off for a steak that’s just as juicy.
