José Andrés' Favorite Way To Eat Mussels Is A Strange Combo

If you're seeking a simple yet delicious combination for a quick tapas-style appetizer, renowned Spanish chef José Andrés recommends pairing mussels in escabeche sauce with chips.
Escabeche refers to a Spanish tradition of soaking mussels in vinegar and olive oil that effectively "cooks" the mussels. Andrés has his own brand of mussels canned in escabeche sauce.
This odd pairing is wildly popular in Spain, especially when enjoying an alcoholic beverage. You can also find this combo on the menu at José Andrés' Spanish Diner.
A recent video posted to the chef's TikTok page shows a person opening a can of Andrés' mussels in escabeche sauce with a small bag of chips appearing next to it. 
Both the escabeche sauce and mussels are then poured over the chips to create what Andrés calls his "favorite way to eat mussels," according to the caption. 
Once you've arranged individual mussels on each chip, sprinkle with pimentón according to taste, followed by a few splashes of olive oil and escabeche sauce from the can.
