Ina Garten's Go-To Comfort Soup
For Chilly
Winter Nights

Ina Garten is well known for putting her expert twist on a wide range of soups throughout her episodes of "Barefoot Contessa," and most of her soups are seasonal. When it comes to the chilly winter months, you may naturally assume a soup like Winter Minestrone is her personal favorite, but the real answer may surprise you.
According to Garten, "My Italian Wedding Soup has to be my all-time favorite soup for dinner, and it's just as good reheated for lunch the next day." While this soup traditionally features a chicken stock base, acini de pepe pasta, parmesan cheese, egg, beef and pork meatballs, and leafy greens like escarole, Garten’s variation takes a bit of a different approach.
Instead of pork or beef based meatballs, Garten uses a combination of roasted ground chicken and chicken sausage. To make the chicken the true star of her Italian wedding soup, Garten prepares her chicken stock entirely from scratch in a four-hour process that involves three whole chickens and excellently delicious results.
