Most of us think of mayonnaise as a key ingredient in a potato salad, but if you're not a fan of the condiment, try making a French-style potato salad instead.
French-style potato salad is a simple combination of potatoes, oil, Dijon mustard, and herbs. Using the right potatoes and a good olive oil for an elegant flavor is important.
Bottled mayonnaise is a relatively new product in the history of potato salad; it's only in the last 100 years that we've been using it to mix potatoes with other ingredients.
Just like comparing a salad dressed with vinaigrette and a salad topped with a creamy dressing, French-style potato salad is more delicate than a salad made with mayonnaise.
Its flavor relies on fresh ingredients, starting with the right potatoes. French cuisine often uses new potatoes, which are harvested within the first 60 to 90 days after planting.
These tiny spuds have very thin skins and taste creamy and sweet, perfect for a French-style potato salad. Fingerling or baby Yukon gold potatoes are also good choices.
