Cutting potatoes can be a painstaking process, but there's an easy way to cut uniform, aesthetic potato wedges without the potatoes rolling around on your cutting board.
Thoroughly wash and dry your potatoes, then inspect them and remove any eyes or buds. Cut a potato in half, holding it still while keeping your fingers away from the blade.
Place each half face-down on the cutting board for stability, and cut them in half again. Place them skin-down and carefully slice them lengthwise into two equally sized wedges.
If your potato is extra large, you may need to cut these wedges in half again. This method creates potato wedges of the same size, which will ensure they cook evenly.
For softer potatoes, cut them thicker and place them close together in the oven. If you remove the skins, peel the potatoes after washing and trimming them before cutting them.
