To ensure he gets cookies with a deliciously gummy center, Goldman bakes them for the perfect amount of time and gets them out of the oven as soon as they get some hue.
Goldman understands that monitoring cookies while they bake for the optimal amount of time and removing them from the oven at this key moment will lead to a soft center.
Different cookies require different baking times — for drop cookies on a baking sheet, bake for 8 to 10 minutes, and bar cookies in a 13 x 9 x 2-inch pan need 25 to 30 minutes.
