How Bobby Flay Builds A Vegetable Spice Rub

Celebrity chef Bobby Flay is mainly known as a master of grilled meats, but he also prepares vegetables with the same expertise and respect. While marinades are great for big cuts of meat, they're unsuitable for vegetables, which is why Flay is a fan of spice rubs.
Flay praises spice rubs for all his grilled dishes — vegetables included — and explains that they're most effective when using herbs, spices, and mustard or horseradish to make them multi-dimensional. He says that one of the things he likes about rubs is that they can be applied immediately before cooking, saving valuable prep time.
The great thing about Flay's rubs is that they can be tweaked according to your tastes and usually include spices already found in your spice cabinet, like cumin, oregano, salt, and black pepper. According to Food Network and She Knows, Flay is also fond of mustard powder, Spanish paprika, anchovies, red and green curry sauce, and hot peppers like chile de arbol, ancho, and cayenne.
