Justin Chapple, a graduate of the French Culinary Institute, explains that when butter is incorporated into potatoes and chilled, the butter solidifies, making reheating difficult.
However, mayonnaise maintains a yielding consistency, creating a silky texture. This quality reduces the risk of drying the potatoes or developing a burnt layer at the bottom.
Reduce the butter to account for the addition of mayo to your mashed potatoes. Chapple's ratio is 4 pounds of potatoes to a full cup of mayonnaise and 1½ sticks of butter.
