De Cecco pasta has a cruder texture that helps sauces stick to the pasta shapes, and it's also useful when making sauces that require pasta water.
Cipriani is an artisanal pasta brand founded at a restaurant in Venice in the 1930s. It cooks like handmade fresh pasta and pairs well with ingredients like sea urchin or truffles.
