Although feta doesn't melt, it softens when mixed with warm pasta, resulting in a grainy texture. Instead, try adding cream cheese to amp up the creaminess in your feta pasta.
Cream cheese creates a smooth and luxurious feel. It melts beautifully and has a mildly tangy flavor that accentuates the bold flavor of the feta without overpowering it.
To make creamy feta pasta, nestle a block of feta in the center of a bunch of cherry tomatoes with cubes of cream cheese, and add olive oil, red pepper, salt, pepper, and garlic.
Since the cream cheese adds richness and bold flavor, you can lean into the Mediterranean aspect by adding chopped kalamata olives, sundried tomatoes, and artichoke hearts.
The more cream cheese you add, the thicker and creamier it will be, but to maintain the integrity of the flavor, don't add more cream cheese than feta cheese.
