For Delicious Dairy-Free Banana Bread, You Can't Beat Hazelnuts
By Camryn Teder
One of the biggest mistakes people make when baking vegan banana bread is not adding enough moisture-inducing additions, which leads to dry and brittle outcomes.
However, the addition of hazelnuts will bring more than robust complimentary flavors to your banana bread recipe and elevate its texture.
Nuts like these are full of natural fats and oils, making them the perfect replacement for dairy ingredients. They also won’t overwhelm the subtly sweet flavor of the banana.
For maximum release of moisture and flavor, roast your nuts in the oven until they're warm and fragrant. Then, remove the skins by rubbing the hazelnuts together in a tea towel.
Next, place the nuts in a food processor with all your dry ingredients and pulse until combined. Finally, mix the wet and dry ingredients and bake.
You can also make a homemade hazelnut spread. Add about 2 cups of the rich dip with your other banana bread ingredients to reap the same delicious benefits.
For some crunch, add the roasted hazelnuts to your bread while they're chopped or whole. Whichever way you choose, the advantages remain the same.
