Cream Cheese Is The Secret Ingredient For Soft Gooey Cookies

It can be hard to find a recipe to make a cookie delicious but not too sweet and chewy but not too soft. However, incorporating cream cheese will do the trick.
In a chocolate chip cookie recipe, butter typically adds a chewy richness and helps create a soft, creamy texture. With cream cheese, the richness and texture are multiplied.
Pastry chef Lindsey Farr writes on her recipe blog, "Cream cheese behaves differently than butter when baked, which makes cookies thicker and chewier than using butter alone."
To effectively integrate cream cheese into your chocolate chip cookie recipe, cream the butter and cream cheese together, then cream the sugar and butter-cheese mix.
Be careful about using low-fat cream cheese or Neufchatel because they differ in thickness from standard cream cheese, which could change the cookies' texture.
