Even with the correct ingredient ratios, achieving bakery-soft cookies or other sweets at home can be a struggle. Luckily, adding some cornstarch can create the perfect texture.
According to Bob's Red Mill, mixing cornstarch with flour can soften up the flour's "rigid proteins," leaving you with a dessert that's much more tender and less glutenous.
You only need to add a teaspoon or two of cornstarch to the dry ingredients. Some recommend first turning it into a slurry with water before adding it to the batter.
A slurry is easier to incorporate and prevents clumps while keeping each cornstarch molecule intact and ready for scientific reaction during the baking process.
Using a slurry is also ideal when adding cornstarch to recipes as a thickener to give pie filling a jamlike texture. Cornstarch is also a vegan alternative to gelatin in puddings.
