For extra-moist banana bread, swap out butter for coconut oil. It is made of pure fat, so coconut oil may give your bread a more even consistency while adding a hint of flavor.
Coconut oil has no added water, so you're left with an airier crumb that is less dense than loaves made with butter. The oil also helps maintain moisture without making it damp.
Another benefit of coconut oil is that you don't have to stress about overmixing your batter. Without the added water, the flour will remain stable and not become dense or stiff.
The flavor is an added benefit. Unrefined coconut oil has a distinct coconut flavor that pairs well with the bananas in the bread and other ingredients you might add, like walnuts.
If you don't want any coconut flavor in your bread, choose refined coconut oil as opposed to unrefined. Coconut oil can replace butter in a 1-to-1 ratio.
